Haymarket Wine House speciality cut is the Butlers' steak, also called the Flat Iron or Oyster Blade steak.
It is a cut of steak with the grain from the beef shoulder. It’s a darned good cut, though fibrous it is very tender and juicy.
This lesser known cut has a wonderful meaty flavour and fine texture when prepared carefully with a significant amount of marbling.
Cooked rare to medium on a super-hot charcoal griddle. Served with a choice of Bearnaise, Green peppercorn or our Haymarket Wine House secret sauce, plus our rosemary salted fries.
Express lunches, pre-theatre and sharing charcuterie & cheese platters are also available.
